Winter Weather Weekend

We've had quite the winter here in Arkansas! It's either storming or snowing it seems.. Drew has been working non-stop so some nights Brett and I take him dinner at the station. I try and try to get a good picture of them but just can't seem to do it.

On Thursday we had some weather moving in so Brett and I headed to Fort Smith. We made a stop at PawPaw Preston and WeeWee's house on the way.

We made it back home on Saturday afternoon. We had fun at Nana's but we really missed Drew! The roads were clear all the way home, no problem. Hope you all have a great week!

Chicken & Rice Soup Recipe

1 lb raw, boneless, chicken breast cut into 1/2 inch dice
2 t creole seasoning
2 T olive oil
1 c diced onion (small dice)
1 c diced carrot (small dice)
1 c diced celery (small dice)
1 T minced fresh garlic
1/2 t dried basil
1/2 t salt
dash crushed red pepper flakes (more if you like it spicy!)
1 qt low-sodium chicken broth
1/4 uncooked long grain white rice
2 handfuls fresh baby spinach

Season chicken with creole seasoning and set aside. Heat olive oil over med-high heat in a soup pot. Add onion, carrot, celery and cook, stirring occasionally until onions are translucent, about 5 minutes. Add garlic, basil, salt, pepper and cook for 1 minute. Add chicken and cook for 3 minutes. Add the broth and rice, cover pot, and bring to boil over high heat. Remove cover, reduce heat to low, and simmer until rice is tender, about 12 minutes. Stir in spinach and serve. Makes 3 to 4 servings.

This soup tastes like it took all day to make! Hope you guys will give it a try :)

Happy New Year! And a Snow Day for Brett!

Drew and I rang in the New Year with some great friends this year! Brett stayed with Nana while we got all dressed up for Tinsel & Tails in Fort Smith, an annual black tie fundraiser for The Alzheimer's Association. We lasted there until about 11:30pm and then decided to head across the street to Old Town where there was a live bluegrass band playing.. and WOW, were we overdressed there?!

It started snowing in Northwest Arkansas last night and we woke up to about 3.5 inches.. it snowed all day too!











Brett was so excited to be able to walk around in the front yard! We usually don't let him play on the driveway because he starts running down the slope and has fallen on his face before.. ouch.. no threat of cars usually but that concrete can be rough! So, he had to make a little trip across the cul-de-sac.. then he came right back! Love the footprints :) He had so much fun playing.. we got everything on video too!
